Ingredients

  • 2 pounds turkey tails
  • 1 cup duck fat or olive oil
  • 4 cloves garlic, crushed
  • 2 sprigs fresh thyme
  • 1 bay leaf
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Preheat your oven to 250°F (120°C).
  2. In a large baking dish, combine turkey tails, duck fat, garlic, thyme, bay leaf, salt, and pepper.
  3. Cover the dish with foil and bake for 3 hours, until the meat is tender.
  4. Remove from the oven and let cool slightly.
  5. Carefully separate the meat from the bones and skin, then shred the meat.
  6. In a skillet, heat some of the rendered fat over medium heat and crisp the shredded turkey tail until golden and crispy.
  7. Serve hot and enjoy!
