Ingredients

- 2 pounds turkey tails
- 1 cup duck fat or olive oil
- 4 cloves garlic, crushed
- 2 sprigs fresh thyme
- 1 bay leaf
- Salt to taste
- Black pepper to taste
Instructions
- Preheat your oven to 250°F (120°C).
- In a large baking dish, combine turkey tails, duck fat, garlic, thyme, bay leaf, salt, and pepper.
- Cover the dish with foil and bake for 3 hours, until the meat is tender.
- Remove from the oven and let cool slightly.
- Carefully separate the meat from the bones and skin, then shred the meat.
- In a skillet, heat some of the rendered fat over medium heat and crisp the shredded turkey tail until golden and crispy.
- Serve hot and enjoy!

- Store any leftover confit in the refrigerator in a sealed container.
- This dish can be served as an appetizer or as a main course.
