Instructions
- Preheat your oven to 250°F (120°C).
- In a large oven-safe pot, melt the duck fat over medium heat.
- Add the turkey tails, onion, garlic, thyme, bay leaf, and salt.
- Cover and cook in the oven for about 4 hours, or until the meat is tender.
- Remove from oven and cool in the fat.
- To serve, heat a skillet over medium-high heat and fry the turkey tails until crispy.
