- 1 ½ cups almond flour
- 2 tablespoons cocoa powder
- 3 tablespoons coconut oil, melted
- 2 tablespoons maple syrup
- 1/4 teaspoon salt
- 16 ounces cream cheese, softened
- 1/2 cup Greek yogurt
- 1/2 cup honey or agave syrup
- 1 teaspoon vanilla extract
- 3 large eggs
- 1/2 cup unsweetened cocoa powder
Instructions
- Preheat your oven to 325°F. Grease a 9-inch springform pan with cooking spray or line the bottom with parchment paper.
- In a medium bowl, combine almond flour, cocoa powder, melted coconut oil, maple syrup, and salt. Mix until well combined. Press the mixture evenly into the bottom of the prepared springform pan to form the crust.
- In a large mixing bowl, beat the softened cream cheese until smooth. Add Greek yogurt, honey (or agave syrup), and vanilla extract. Mix until fully combined and creamy.
- Add the eggs one at a time, mixing well after each addition. Finally, add the unsweetened cocoa powder and mix until just combined.
- Pour the cheesecake filling over the crust in the springform pan. Smooth the top with a spatula.
- Bake in the preheated oven for 40-45 minutes, or until the edges are set and the center is slightly jiggly. Turn off the oven and leave the cheesecake inside for an additional hour to cool gradually.
- Remove the cheesecake from the oven and let it cool to room temperature. Once cooled, refrigerate for at least 4 hours or overnight for best results.
Notes
- For a richer flavor, consider adding a tablespoon of espresso powder to the filling.
- You can top the cheesecake with fresh berries or a drizzle of dark chocolate for an extra treat.
- If you prefer a crustless version, simply omit the crust and bake the filling in a greased pan.
