Ingredients

  • 2 medium zucchinis, spiralized into noodles
  • 1 cup bell peppers, sliced (any color)
  • 1 cup carrots, julienned
  • 1 cup broccoli florets
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 tablespoon soy sauce
  • 1 teaspoon sesame oil
  • 1/2 teaspoon red pepper flakes (optional)
  • Salt and pepper to taste
  • 2 green onions, sliced (for garnish)
  • Sesame seeds (for garnish)

Instructions

  1. Heat the olive oil in a large skillet over medium heat. Add the minced garlic and sauté for about 30 seconds until fragrant.
  2. Add the sliced bell peppers, carrots, and broccoli to the skillet. Stir-fry for 5-7 minutes until the vegetables are tender but still crisp.
  3. Stir in the spiralized zucchini noodles and cook for an additional 2-3 minutes until they are just tender.
  4. Pour in the soy sauce and sesame oil, and sprinkle with red pepper flakes, salt, and pepper. Toss everything together until well combined.
  5. Remove from heat and garnish with sliced green onions and sesame seeds before serving.

Notes

  • For added protein, consider tossing in cooked chicken, shrimp, or tofu during the stir-fry.
