Ingredients

- 2 medium zucchinis, spiralized into noodles
- 1 cup bell peppers, sliced (any color)
- 1 cup carrots, julienned
- 1 cup broccoli florets
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1 tablespoon soy sauce
- 1 teaspoon sesame oil
- 1/2 teaspoon red pepper flakes (optional)
- Salt and pepper to taste
- 2 green onions, sliced (for garnish)
- Sesame seeds (for garnish)
Instructions
- Heat the olive oil in a large skillet over medium heat. Add the minced garlic and sauté for about 30 seconds until fragrant.
- Add the sliced bell peppers, carrots, and broccoli to the skillet. Stir-fry for 5-7 minutes until the vegetables are tender but still crisp.
- Stir in the spiralized zucchini noodles and cook for an additional 2-3 minutes until they are just tender.
- Pour in the soy sauce and sesame oil, and sprinkle with red pepper flakes, salt, and pepper. Toss everything together until well combined.
- Remove from heat and garnish with sliced green onions and sesame seeds before serving.
Notes
- For added protein, consider tossing in cooked chicken, shrimp, or tofu during the stir-fry.
- Experiment with different vegetables such as snap peas, mushrooms, or baby corn for variety.
