- 2 cups all-purpose flour
- 1 ½ cups granulated sugar
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- ½ teaspoon salt
- 1 cup unsweetened cocoa powder
- 1 cup buttermilk, room temperature
- ½ cup vegetable oil
- 2 large eggs, room temperature
- 2 teaspoons vanilla extract
- 1 cup fresh blueberries (plus extra for garnish)
- 1 cup heavy cream
- 2 tablespoons powdered sugar
- 1 teaspoon vanilla extract (for whipped cream)
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, salt, and cocoa powder until well combined.
- In another bowl, mix the buttermilk, vegetable oil, eggs, and vanilla extract until smooth. Gradually add the wet ingredients to the dry ingredients, stirring until just combined.
- Gently fold in the fresh blueberries, being careful not to crush them.
- Divide the batter evenly between the prepared cake pans. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the cakes to cool in the pans for 10 minutes before transferring them to wire racks to cool completely.
- While the cakes are cooling, prepare the whipped cream. In a mixing bowl, beat the heavy cream, powdered sugar, and vanilla extract until soft peaks form.
- Once the cakes are completely cooled, place one layer on a serving plate. Spread a layer of whipped cream on top, then place the second layer on top.
- Frost the top and sides of the cake with the remaining whipped cream. Garnish with additional fresh blueberries.
- Serve immediately or refrigerate for up to 2 hours before serving for a firmer texture.
Notes
- For a richer flavor, try adding a teaspoon of almond extract to the batter.
- You can also substitute the blueberries with raspberries or strawberries for a different fruit twist.
