Ingredients

  • 1 cup unsweetened cocoa powder
  • 1 cup buttermilk, room temperature
  • ½ cup vegetable oil
  • 2 large eggs, room temperature
  • 2 teaspoons vanilla extract
  • 1 cup fresh blueberries (plus extra for garnish)
  • 1 cup heavy cream
  • 2 tablespoons powdered sugar
  • 1 teaspoon vanilla extract (for whipped cream)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, salt, and cocoa powder until well combined.
  3. In another bowl, mix the buttermilk, vegetable oil, eggs, and vanilla extract until smooth. Gradually add the wet ingredients to the dry ingredients, stirring until just combined.
  4. Gently fold in the fresh blueberries, being careful not to crush them.
  5. Divide the batter evenly between the prepared cake pans. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  6. Allow the cakes to cool in the pans for 10 minutes before transferring them to wire racks to cool completely.
  7. While the cakes are cooling, prepare the whipped cream. In a mixing bowl, beat the heavy cream, powdered sugar, and vanilla extract until soft peaks form.
  8. Once the cakes are completely cooled, place one layer on a serving plate. Spread a layer of whipped cream on top, then place the second layer on top.
  9. Frost the top and sides of the cake with the remaining whipped cream. Garnish with additional fresh blueberries.
  10. Serve immediately or refrigerate for up to 2 hours before serving for a firmer texture.
