Ingredients

  • 4 tablespoons loose Thai tea leaves (or 45 Thai tea bags)
  • ¾ cup granulated sugar
  • 5 large egg yolks
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • Sugar for caramelizing (about ¼ cup)

Instructions

  1. Preheat your oven to 325°F. Place six ramekins in a large baking dish and set aside.
  2. In a medium saucepan, combine the heavy cream, whole milk, and Thai tea leaves. Heat over medium heat until just simmering, then remove from heat. Cover and let steep for 15 minutes.
  3. Strain the mixture through a fine mesh sieve into a bowl, discarding the tea leaves.
  4. In a separate bowl, whisk together the granulated sugar, egg yolks, vanilla extract, and salt until smooth and pale.
  5. Gradually whisk the warm tea-infused cream mixture into the egg yolk mixture until well combined.
  6. Pour the custard mixture evenly into the prepared ramekins.
  7. Carefully pour hot water into the baking dish around the ramekins, creating a water bath that reaches halfway up the sides of the ramekins.
  8. Bake for 30-35 minutes, or until the edges are set but the centers are still slightly jiggly.
  9. Remove the ramekins from the water bath and let them cool to room temperature. Cover and refrigerate for at least 4 hours or overnight.
  10. Before serving, sprinkle a thin layer of sugar over the top of each custard. Use a kitchen torch to caramelize the sugar until golden and crispy. If you don’t have a torch, place the ramekins under a broiler for 1-2 minutes, watching closely to prevent burning.
