A unique dessert recipe that combines the flavors of Thai tea with the classic French dessert, creme brulee.

- 1 ½ cups heavy cream
- 1 ½ cups whole milk
- 4 tablespoons loose Thai tea leaves (or 4–5 Thai tea bags)
- ¾ cup granulated sugar
- 5 large egg yolks
- 1 teaspoon vanilla extract
- Pinch of salt
- Sugar for caramelizing (about ¼ cup)
Instructions
- Preheat your oven to 325°F. Place six ramekins in a large baking dish and set aside.
- In a medium saucepan, combine the heavy cream, whole milk, and Thai tea leaves. Heat over medium heat until just simmering, then remove from heat. Cover and let steep for 15 minutes.
- Strain the mixture through a fine mesh sieve into a bowl, discarding the tea leaves.
- In a separate bowl, whisk together the granulated sugar, egg yolks, vanilla extract, and salt until smooth and pale.
- Gradually whisk the warm tea-infused cream mixture into the egg yolk mixture until well combined.
- Pour the custard mixture evenly into the prepared ramekins.
- Carefully pour hot water into the baking dish around the ramekins, creating a water bath that reaches halfway up the sides of the ramekins.
- Bake for 30-35 minutes, or until the edges are set but the centers are still slightly jiggly.
- Remove the ramekins from the water bath and let them cool to room temperature. Cover and refrigerate for at least 4 hours or overnight.
- Before serving, sprinkle a thin layer of sugar over the top of each custard. Use a kitchen torch to caramelize the sugar until golden and crispy. If you don’t have a torch, place the ramekins under a broiler for 1-2 minutes, watching closely to prevent burning.
Notes
- For a twist, try adding a splash of coconut milk to the custard mixture for a richer flavor.
- Experiment with different flavored teas, such as chai or earl grey, for a unique take on this classic dessert.
