Tendon Hot Pot is a hearty and comforting dish featuring tender beef tendon simmered in a flavorful broth with fresh vegetables and tofu.

- 2 cups beef tendon, cleaned and cut into chunks
- 6 cups beef broth
- 1 tablespoon soy sauce
- 1 tablespoon rice wine
- 1 tablespoon sesame oil
- 1 teaspoon ginger, minced
- 2 cloves garlic, minced
- 1 medium onion, sliced
- 1 cup mushrooms, sliced (shiitake or button)
- 1 cup bok choy, chopped
- 1 cup carrots, sliced
- 1 cup daikon radish, sliced
- 1 package (14 oz) firm tofu, cubed
- 2 green onions, chopped
- Salt and pepper to taste
Instructions
- In a large pot, combine the beef broth, soy sauce, rice wine, sesame oil, ginger, garlic, and onion.
- Bring to a boil over medium-high heat.
- Add the beef tendon to the pot and reduce the heat to low.
- Simmer for about 2 hours, or until the tendon is tender.
- Stir in the mushrooms, bok choy, carrots, and daikon radish.
- Cook for an additional 10-15 minutes, until the vegetables are tender.
- Gently add the cubed tofu and cook for another 5 minutes to heat through.
- Season with salt and pepper to taste.
- Serve hot, garnished with chopped green onions.
Notes
- For a spicier version, add sliced jalapeños or a dash of chili oil to the broth.
- You can substitute the beef tendon with chicken or shrimp for a different flavor profile.
