- 1 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 1/2 cup tahini
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1/4 teaspoon salt
- 1/4 teaspoon baking powder
- 1/4 cup sesame seeds (optional)
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Add the tahini and vanilla extract to the butter mixture, and mix until well combined.
- In a separate bowl, whisk together the all-purpose flour, salt, and baking powder. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- If using, fold in the sesame seeds for added texture and flavor.
- Scoop tablespoon-sized portions of dough and roll them into balls. Place them on the prepared baking sheet, spacing them about 2 inches apart.
- Gently flatten each ball with the bottom of a glass or your palm.
- Bake in the preheated oven for 12-15 minutes, or until the edges are lightly golden.
- Remove from the oven and let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
Notes
- For a chocolate twist, add 1/2 cup of mini chocolate chips to the dough before baking.
- Experiment with different nut butters, such as almond or peanut butter, for a unique flavor profile.
