Ingredients

  • 1 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/2 cup tahini
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1/4 teaspoon salt
  • 1/4 teaspoon baking powder
  • 1/4 cup sesame seeds (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Add the tahini and vanilla extract to the butter mixture, and mix until well combined.
  4. In a separate bowl, whisk together the all-purpose flour, salt, and baking powder. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. If using, fold in the sesame seeds for added texture and flavor.
  6. Scoop tablespoon-sized portions of dough and roll them into balls. Place them on the prepared baking sheet, spacing them about 2 inches apart.
  7. Gently flatten each ball with the bottom of a glass or your palm.
  8. Bake in the preheated oven for 12-15 minutes, or until the edges are lightly golden.
  9. Remove from the oven and let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Notes

  • For a chocolate twist, add 1/2 cup of mini chocolate chips to the dough before baking.
