Description

A delightful Syrian Chickpea and Yogurt Casserole that combines the creaminess of yogurt with the heartiness of chickpeas, perfect for a comforting meal.


Ingredients

  • 2 cups canned chickpeas, drained and rinsed
  • 1 cup plain Greek yogurt
  • 1 cup diced tomatoes (fresh or canned)
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon red pepper flakes (optional)
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon freshly ground black pepper
  • 2 tablespoons extra virgin olive oil
  • 1/4 cup fresh cilantro, chopped (for garnish)
  • 1/2 cup crumbled goat cheese (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, heat the olive oil over medium heat.
  3. Add the chopped onion and sauté until soft and translucent, about 5 minutes.
  4. Add the minced garlic, cumin, coriander, smoked paprika, red pepper flakes, sea salt, and black pepper. Stir for another 2 minutes.
  5. In a separate bowl, combine the rinsed chickpeas and diced tomatoes, then fold in the sautéed onion and spice mixture.
  6. Spread half of the chickpea mixture evenly in a greased 9×13 inch baking dish.
  7. In another bowl, season the Greek yogurt with a pinch of sea salt and layer half of it over the chickpea base.
  8. Top with the remaining chickpea mixture, followed by the rest of the yogurt.
  9. If using, sprinkle goat cheese on top.
  10. Bake for about 25-30 minutes, or until the top is golden and bubbling.
  11. Allow to cool for about 5 minutes before garnishing with fresh cilantro and serving.

Notes

  • For a spicier dish, increase the amount of red pepper flakes.
  • Goat cheese is optional but adds a nice flavor.
  • This dish can be served warm or at room temperature.
