Description
A delightful Syrian Chickpea and Yogurt Casserole that combines the creaminess of yogurt with the heartiness of chickpeas, perfect for a comforting meal.

- 2 cups canned chickpeas, drained and rinsed
- 1 cup plain Greek yogurt
- 1 cup diced tomatoes (fresh or canned)
- 1 medium onion, finely chopped
- 3 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon smoked paprika
- 1/2 teaspoon red pepper flakes (optional)
- 1/2 teaspoon sea salt
- 1/4 teaspoon freshly ground black pepper
- 2 tablespoons extra virgin olive oil
- 1/4 cup fresh cilantro, chopped (for garnish)
- 1/2 cup crumbled goat cheese (optional)
Instructions
- Preheat your oven to 375°F (190°C).
- In a large skillet, heat the olive oil over medium heat.
- Add the chopped onion and sauté until soft and translucent, about 5 minutes.
- Add the minced garlic, cumin, coriander, smoked paprika, red pepper flakes, sea salt, and black pepper. Stir for another 2 minutes.
- In a separate bowl, combine the rinsed chickpeas and diced tomatoes, then fold in the sautéed onion and spice mixture.
- Spread half of the chickpea mixture evenly in a greased 9×13 inch baking dish.
- In another bowl, season the Greek yogurt with a pinch of sea salt and layer half of it over the chickpea base.
- Top with the remaining chickpea mixture, followed by the rest of the yogurt.
- If using, sprinkle goat cheese on top.
- Bake for about 25-30 minutes, or until the top is golden and bubbling.
- Allow to cool for about 5 minutes before garnishing with fresh cilantro and serving.
Notes
- For a spicier dish, increase the amount of red pepper flakes.
- Goat cheese is optional but adds a nice flavor.
- This dish can be served warm or at room temperature.
