Instructions
- Preheat the oven to 400°F (200°C).
- Dice the sweet potatoes and toss them with olive oil, paprika, cumin, salt, and pepper.
- Spread the sweet potatoes on a baking sheet and roast for about 25-30 minutes until tender.
- Meanwhile, rinse the quinoa and cook it in vegetable broth according to package instructions.
- In a bowl, layer the cooked quinoa, roasted sweet potatoes, chickpeas, diced avocado, red bell pepper, and spinach.
- Drizzle with additional olive oil or dressing if desired, and serve warm.
