Description
Indulge in these guilt-free sweet potato brownies that are both delicious and nutritious.
Ingredients
Scale
- 1 cup mashed sweet potatoes (approximately 1 medium sweet potato, cooked and cooled)
- 1/2 cup smooth peanut butter or almond butter
- 1/4 cup honey or maple syrup
- 1/4 cup unsweetened cocoa powder
- 1/2 teaspoon vanilla extract
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup dark chocolate chips (optional)
Instructions
- Preheat your oven to 350°F (175°C) and prepare an 8×8-inch baking dish by greasing it or lining it with parchment paper.
- In a mixing bowl, blend the mashed sweet potatoes with the peanut butter and honey (or maple syrup) until you achieve a creamy consistency.
- Sift in the cocoa powder, then add the vanilla extract, baking powder, and salt, stirring until everything is thoroughly mixed.
- If you choose to include dark chocolate chips, gently fold them into the batter.
- Transfer the mixture into the prepared baking dish, smoothing it out evenly.
- Bake in the preheated oven for 20-25 minutes, checking for doneness with a toothpick; it should come out mostly clean.
- Once baked, let the brownies cool in the dish for about 10 minutes before slicing them into squares.
Notes
- For an extra depth of flavor, consider adding a teaspoon of espresso powder to the mix.
- You can replace the peanut butter with sunflower seed butter for a nut-free option.
