Ingredients
Scale
- 2 cups cooked sushi rice
- 2 tablespoons rice vinegar
- 1 tablespoon sugar
- 1 teaspoon salt
- 12 wonton wrappers
- 1 cup cooked shrimp, chopped
- 1 avocado, diced
- 1 small cucumber, julienned
- 1/4 cup green onions, sliced
- 1/4 cup mayonnaise
- 1 tablespoon sriracha (optional)
- Soy sauce, for serving
- Pickled ginger, for serving
- Wasabi, for serving
Instructions
- Preheat your oven to 375°F. Lightly grease a muffin tin.
- In a medium bowl, combine the cooked sushi rice, rice vinegar, sugar, and salt. Mix well and set aside to cool.
- Take a wonton wrapper and gently press it into the muffin tin to form a cone shape. Repeat with the remaining wrappers.
- Bake the wonton wrappers in the preheated oven for about 8-10 minutes or until they are golden brown and crispy. Remove from the oven and let cool.
- In a small bowl, mix the mayonnaise and sriracha (if using) to create a spicy mayo.
- Once the wonton cones are cool, fill each cone with a layer of sushi rice, followed by chopped shrimp, diced avocado, cucumber, and green onions.
- Drizzle the spicy mayo over the top of each filled cone.
- Serve immediately with soy sauce, pickled ginger, and wasabi on the side.
Notes
- For a vegetarian option, substitute the shrimp with marinated tofu or additional vegetables like bell peppers and carrots.
- You can also add sesame seeds on top for extra crunch and flavor.
