Description

A delicious and guilt-free treat, these Sugar-Free Tart Cherry Lemon Drops are perfect for satisfying your sweet tooth without the added sugar.


Ingredients

  • 1 cup tart cherry juice (unsweetened)
  • 1/2 cup fresh lemon juice (about 4 lemons)
  • 1/4 cup erythritol or your preferred sugar substitute
  • 1 tablespoon lemon zest
  • 1/4 teaspoon salt
  • 1 tablespoon gelatin powder
  • 1/4 cup cold water
  • 1/2 cup hot water

Instructions

  1. In a small bowl, combine the cold water and gelatin powder. Let it sit for about 5 minutes to bloom.
  2. In a saucepan over medium heat, combine the tart cherry juice, fresh lemon juice, erythritol, lemon zest, and salt. Stir until the erythritol is fully dissolved.
  3. Once the mixture is warm (not boiling), add the bloomed gelatin and hot water. Stir until the gelatin is completely dissolved.
  4. Remove the saucepan from heat and let the mixture cool slightly.
  5. Pour the mixture into silicone candy molds or a lined baking dish. If using a baking dish, cut into squares once set.
  6. Refrigerate for at least 2 hours or until fully set.
  7. Once set, remove from molds or cut into squares. Store in an airtight container in the refrigerator.

Notes

  • For a different flavor, substitute half of the tart cherry juice with another fruit juice like raspberry or pomegranate.
  • Add a few drops of lemon or cherry extract for an extra burst of flavor.
