A delicious and guilt-free treat, these Sugar-Free Tart Cherry Lemon Drops are perfect for satisfying your sweet tooth without the added sugar.
Ingredients

- 1 cup tart cherry juice (unsweetened)
- 1/2 cup fresh lemon juice (about 4 lemons)
- 1/4 cup erythritol or your preferred sugar substitute
- 1 tablespoon lemon zest
- 1/4 teaspoon salt
- 1 tablespoon gelatin powder
- 1/4 cup cold water
- 1/2 cup hot water
Instructions
- In a small bowl, combine the cold water and gelatin powder. Let it sit for about 5 minutes to bloom.
- In a saucepan over medium heat, combine the tart cherry juice, fresh lemon juice, erythritol, lemon zest, and salt. Stir until the erythritol is fully dissolved.
- Once the mixture is warm (not boiling), add the bloomed gelatin and hot water. Stir until the gelatin is completely dissolved.
- Remove the saucepan from heat and let the mixture cool slightly.
- Pour the mixture into silicone candy molds or a lined baking dish. If using a baking dish, cut into squares once set.
- Refrigerate for at least 2 hours or until fully set.
- Once set, remove from molds or cut into squares. Store in an airtight container in the refrigerator.
Notes
- For a different flavor, substitute half of the tart cherry juice with another fruit juice like raspberry or pomegranate.
- Add a few drops of lemon or cherry extract for an extra burst of flavor.
