- 1 pound boneless, skinless chicken thighs, cut into bite-sized pieces
- 1/2 cup almond flour
- 1/4 cup grated Parmesan cheese
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon ground ginger
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 2 large eggs, beaten
- 1/4 cup soy sauce (or coconut aminos for a soy-free option)
- 2 tablespoons rice vinegar
- 1 tablespoon sesame oil
- 1 tablespoon chili garlic sauce (adjust to taste)
- 2 green onions, sliced (for garnish)
- Sesame seeds (for garnish, optional)
Instructions
- In a large bowl, combine almond flour, Parmesan cheese, garlic powder, onion powder, ground ginger, salt, and black pepper. Mix well.
- Dip each piece of chicken into the beaten eggs, then coat with the almond flour mixture, ensuring each piece is evenly covered.
- Preheat the air fryer to 400°F (200°C) for about 5 minutes.
- Arrange the coated chicken pieces in a single layer in the air fryer basket. Cook for 10-12 minutes, shaking the basket halfway through, until the chicken is golden brown and cooked through.
- While the chicken is cooking, prepare the sauce by whisking together soy sauce, rice vinegar, sesame oil, and chili garlic sauce in a small bowl.
- Once the chicken is done, transfer it to a large bowl and pour the sauce over the top. Toss to coat the chicken evenly.
- Serve the General Tso chicken hot, garnished with sliced green onions and sesame seeds if desired.
Notes
- For extra crunch, consider adding a tablespoon of crushed pork rinds to the coating mixture.
- To make this dish spicier, increase the amount of chili garlic sauce or add a pinch of red pepper flakes to the sauce.
