Description

Delicious Strawberry Rhubarb Bars that combine tart rhubarb and sweet strawberries in a buttery crust.


Ingredients

  • 2 cups fresh strawberries, hulled and sliced
  • 2 cups rhubarb, chopped
  • 1 cup granulated sugar
  • 1/4 cup cornstarch
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter, softened
  • 1/4 cup powdered sugar
  • 1/4 teaspoon baking powder

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix the strawberries and rhubarb with sugar, cornstarch, and salt. Set aside.
  3. In another bowl, combine flour, butter, powdered sugar, and baking powder until crumbly.
  4. Press half of the mixture into the bottom of a greased 9×9 inch baking dish.
  5. Spread the fruit mixture over the crust.
  6. Sprinkle the remaining crumb mixture over the top.
  7. Bake for 35-40 minutes or until golden brown.
  8. Allow to cool before cutting into bars.

Notes

  • For a sweeter bar, increase the sugar for the fruit mixture.
  • Serve with whipped cream for added indulgence.
