Description

Deliciously tangy and sweet strawberry rhubarb bars with a buttery crust and crumb topping.


Ingredients

  • 1 1/2 cups flour
  • 1/2 cup sugar
  • 1/2 cup butter, softened
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2 cups rhubarb, chopped
  • 1 cup strawberries, sliced
  • 1/2 cup sugar
  • 2 tablespoons cornstarch

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix flour, sugar, butter, vanilla, baking powder, and salt until crumbly.
  3. Press half of the mixture into a greased baking pan.
  4. In another bowl, combine rhubarb, strawberries, sugar, and cornstarch. Pour over the crust.
  5. Sprinkle the remaining crumb mixture on top.
  6. Bake for 30-35 minutes or until golden.
  7. Cool before cutting into bars.
