Deliciously tangy and sweet strawberry rhubarb bars with a buttery crust and crumb topping.
Ingredients

- 1 1/2 cups flour
- 1/2 cup sugar
- 1/2 cup butter, softened
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 2 cups rhubarb, chopped
- 1 cup strawberries, sliced
- 1/2 cup sugar
- 2 tablespoons cornstarch
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, mix flour, sugar, butter, vanilla, baking powder, and salt until crumbly.
- Press half of the mixture into a greased baking pan.
- In another bowl, combine rhubarb, strawberries, sugar, and cornstarch. Pour over the crust.
- Sprinkle the remaining crumb mixture on top.
- Bake for 30-35 minutes or until golden.
- Cool before cutting into bars.
Notes
- These bars are best enjoyed chilled.
- Store in the refrigerator for up to one week.
