Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, softened
  • 2 cups granulated sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup whole milk
  • 1 cup fresh strawberries, pureed
  • 1/2 cup heavy cream
  • 1/4 cup powdered sugar
  • Fresh strawberries, for garnish

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
  3. In a large mixing bowl, cream the softened butter and granulated sugar together until light and fluffy, about 3-4 minutes.
  4. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  5. Gradually add the dry ingredients to the butter mixture, alternating with the whole milk. Begin and end with the dry ingredients. Mix until just combined.
  6. Fold in the pureed strawberries gently until evenly distributed.
  7. Pour the batter into the prepared loaf pan and smooth the top. Bake for 55-65 minutes, or until a toothpick inserted in the center comes out clean.
  8. Allow the cake to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
  9. While the cake is cooling, whip the heavy cream with the powdered sugar until soft peaks form.
  10. Once the cake is cool, slice and serve with a dollop of whipped cream and fresh strawberries on top.

Notes

  • For a lighter version, substitute half the butter with unsweetened applesauce.
  • To enhance the strawberry flavor, add a teaspoon of strawberry extract to the batter.
