- 1 cup almond milk (or any milk of your choice)
- 1/4 cup chia seeds
- 1/4 cup Greek yogurt
- 1/4 cup cream cheese, softened
- 1/4 cup honey or maple syrup
- 1 teaspoon vanilla extract
- 1/2 teaspoon lemon juice
- 1 cup fresh strawberries, diced
- Graham cracker crumbs for topping (optional)
Instructions
- In a medium bowl, whisk together the almond milk, chia seeds, Greek yogurt, cream cheese, honey (or maple syrup), vanilla extract, and lemon juice until well combined.
- Let the mixture sit for about 5 minutes, then whisk again to break up any clumps of chia seeds.
- Cover the bowl and refrigerate for at least 4 hours, or overnight, until the chia seeds have absorbed the liquid and the pudding has thickened.
- Once the pudding is set, stir in the diced strawberries.
- Serve the chia pudding in individual bowls or jars, topped with additional strawberries and a sprinkle of graham cracker crumbs if desired.
Notes
- For a dairy-free version, use coconut yogurt instead of Greek yogurt and omit the cream cheese.
- Add a tablespoon of cocoa powder to the mixture for a chocolate twist.
- Substitute half of the strawberries with other berries like blueberries or raspberries for a mixed berry flavor.
