Ingredients

  • 1 cup aquafaba (the liquid from canned chickpeas)
  • 1/4 teaspoon cream of tartar
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 1/2 cups fresh strawberries, hulled and sliced
  • 1 tablespoon lemon juice
  • 1/4 cup coconut cream (optional, for added richness)

Instructions

  1. Pour the aquafaba into a spacious mixing bowl and add the cream of tartar.
  2. Whip the mixture with an electric mixer on high speed until it reaches soft peaks, about 5 to 7 minutes.
  3. Slowly incorporate the powdered sugar while continuing to whip until stiff peaks form, an additional 3 to 5 minutes.
  4. Mix in the vanilla extract once the peaks are achieved.
  5. Blend the hulled strawberries and lemon juice in a blender or food processor until smooth.
  6. If desired, blend in the coconut cream for a creamier texture.
  7. Gently fold the strawberry puree into the whipped aquafaba mixture, being careful to maintain the airy texture.
  8. Transfer the mousse into individual serving bowls or glasses.
  9. Refrigerate for a minimum of 2 hours to allow the mousse to set properly.
  10. Serve chilled, optionally garnished with extra strawberry slices or a spoonful of coconut cream.
