- 1 cup aquafaba (the liquid from canned chickpeas)
- 1/4 teaspoon cream of tartar
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 1/2 cups fresh strawberries, hulled and sliced
- 1 tablespoon lemon juice
- 1/4 cup coconut cream (optional, for added richness)
Instructions
- Pour the aquafaba into a spacious mixing bowl and add the cream of tartar.
- Whip the mixture with an electric mixer on high speed until it reaches soft peaks, about 5 to 7 minutes.
- Slowly incorporate the powdered sugar while continuing to whip until stiff peaks form, an additional 3 to 5 minutes.
- Mix in the vanilla extract once the peaks are achieved.
- Blend the hulled strawberries and lemon juice in a blender or food processor until smooth.
- If desired, blend in the coconut cream for a creamier texture.
- Gently fold the strawberry puree into the whipped aquafaba mixture, being careful to maintain the airy texture.
- Transfer the mousse into individual serving bowls or glasses.
- Refrigerate for a minimum of 2 hours to allow the mousse to set properly.
- Serve chilled, optionally garnished with extra strawberry slices or a spoonful of coconut cream.

- For a vegan option, ensure all ingredients are plant-based.
- Adjust sweetness by varying the amount of powdered sugar.
