Ingredients

  • 1/2 teaspoon sea salt
  • 1/4 teaspoon baking powder
  • 3 tablespoons extra virgin olive oil
  • 3/4 cup warm water

Instructions

  1. Start by blending the fresh spinach with warm water in a blender until you achieve a smooth, vibrant mixture. Set this aside to let the flavors meld.
  2. In a large bowl, combine the all-purpose flour, sea salt, and baking powder, mixing well to ensure even distribution.
  3. Drizzle the olive oil into the flour mixture, using your fingers or a fork to create a crumbly texture.
  4. Slowly incorporate the spinach puree into the dry ingredients, stirring continuously until the dough begins to come together.
  5. Transfer the dough onto a floured surface and knead for about 5 minutes until it becomes soft and elastic.
  6. Divide the kneaded dough into 8 equal pieces, rolling each piece into a ball.
  7. Cover the dough balls with a damp cloth and allow them to rest for 20-30 minutes to relax the gluten.
  8. Heat a skillet or griddle over medium-high heat until hot.
  9. Take each dough ball and roll it out into a thin circle, approximately 8 inches in diameter.
  10. Place the rolled tortilla on the hot skillet and cook for 1-2 minutes on each side, or until you see light brown spots and the tortilla is cooked through.
  11. Keep the tortillas warm by stacking them and covering with a clean towel while you finish cooking the rest.
