Spinach & Artichoke Dip Chicken Soup is a deliciously comforting dish that combines the flavors of spinach and artichoke dip with hearty chicken soup.

- 2 tablespoons olive oil
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- 1/2 teaspoon red pepper flakes (optional)
- 4 cups chicken broth
- 2 cups cooked, shredded chicken
- 1 can (14 ounces) artichoke hearts, drained and chopped
- 4 cups fresh spinach, roughly chopped
- 1 cup cream cheese, softened
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
Instructions
- In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes. Stir in the minced garlic, thyme, oregano, and red pepper flakes, cooking for an additional minute until fragrant.
- Pour in the chicken broth and bring to a simmer. Add the shredded chicken and chopped artichoke hearts, cooking for about 5 minutes.
- Stir in the chopped spinach and cook until wilted, about 2-3 minutes.
- Lower the heat and add the softened cream cheese, stirring until melted and fully incorporated into the soup.
- Mix in the shredded mozzarella and grated Parmesan cheese, stirring until melted and creamy. Season with salt and pepper to taste.
- Serve hot, garnished with additional Parmesan cheese if desired.
Notes
- For a lighter version, substitute half-and-half for the cream cheese and reduce the amount of cheese used.
- Add a squeeze of lemon juice before serving for a bright flavor boost.
