Description

Spinach & Artichoke Dip Chicken Soup is a deliciously comforting dish that combines the flavors of spinach and artichoke dip with hearty chicken soup.


Ingredients

  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1/2 teaspoon red pepper flakes (optional)
  • 4 cups chicken broth
  • 2 cups cooked, shredded chicken
  • 1 can (14 ounces) artichoke hearts, drained and chopped
  • 4 cups fresh spinach, roughly chopped
  • 1 cup cream cheese, softened
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes. Stir in the minced garlic, thyme, oregano, and red pepper flakes, cooking for an additional minute until fragrant.
  2. Pour in the chicken broth and bring to a simmer. Add the shredded chicken and chopped artichoke hearts, cooking for about 5 minutes.
  3. Stir in the chopped spinach and cook until wilted, about 2-3 minutes.
  4. Lower the heat and add the softened cream cheese, stirring until melted and fully incorporated into the soup.
  5. Mix in the shredded mozzarella and grated Parmesan cheese, stirring until melted and creamy. Season with salt and pepper to taste.
  6. Serve hot, garnished with additional Parmesan cheese if desired.

Notes

  • For a lighter version, substitute half-and-half for the cream cheese and reduce the amount of cheese used.
  • Add a squeeze of lemon juice before serving for a bright flavor boost.
