Ingredients

  • 2 cloves garlic, minced
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon cayenne pepper (adjust to taste)
  • 4 cups peeled and diced apples (about 45 medium apples)
  • 2 cups vegetable broth
  • 1 cup coconut milk
  • 2 tablespoons maple syrup (optional, for sweetness)
  • Salt and pepper to taste
  • Chopped fresh parsley or cilantro for garnish

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  2. Stir in the minced garlic, ground cinnamon, nutmeg, and cayenne pepper. Cook for an additional minute until fragrant.
  3. Add the diced apples to the pot and stir to combine. Cook for about 5 minutes, allowing the apples to soften slightly.
  4. Pour in the vegetable broth and bring the mixture to a boil. Reduce heat and simmer for 15-20 minutes, or until the apples are completely soft.
  5. Use an immersion blender to puree the soup until smooth. Alternatively, transfer the soup in batches to a blender and blend until smooth.
  6. Stir in the coconut milk and maple syrup (if using). Season with salt and pepper to taste. Heat through for another 5 minutes.
  7. Serve hot, garnished with chopped parsley or cilantro.

Notes

  • For a creamier texture, add an additional 1/2 cup of coconut milk.
  • Try using different types of apples for varying sweetness and tartness, such as Granny Smith or Honeycrisp.
