A warm and comforting soup that combines the sweetness of apples with the warmth of spices, perfect for fall.
Ingredients

- 2 tablespoons olive oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon cayenne pepper (adjust to taste)
- 4 cups peeled and diced apples (about 4–5 medium apples)
- 2 cups vegetable broth
- 1 cup coconut milk
- 2 tablespoons maple syrup (optional, for sweetness)
- Salt and pepper to taste
- Chopped fresh parsley or cilantro for garnish
Instructions
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Stir in the minced garlic, ground cinnamon, nutmeg, and cayenne pepper. Cook for an additional minute until fragrant.
- Add the diced apples to the pot and stir to combine. Cook for about 5 minutes, allowing the apples to soften slightly.
- Pour in the vegetable broth and bring the mixture to a boil. Reduce heat and simmer for 15-20 minutes, or until the apples are completely soft.
- Use an immersion blender to puree the soup until smooth. Alternatively, transfer the soup in batches to a blender and blend until smooth.
- Stir in the coconut milk and maple syrup (if using). Season with salt and pepper to taste. Heat through for another 5 minutes.
- Serve hot, garnished with chopped parsley or cilantro.
Notes
- For a creamier texture, add an additional 1/2 cup of coconut milk.
- Try using different types of apples for varying sweetness and tartness, such as Granny Smith or Honeycrisp.
