Description

A unique and flavorful way to prepare lamb heart using sous vide techniques and smoked salt.


Ingredients

Scale
  • 1 lamb heart
  • 2 teaspoons smoked salt
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon black pepper

Instructions

  1. Clean the lamb heart and remove any fat or membranes.
  2. Season the heart with smoked salt, olive oil, minced garlic, and black pepper.
  3. Vacuum seal the lamb heart.
  4. Preheat the sous vide water bath to 140°F (60°C).
  5. Submerge the sealed heart in the water bath and cook for 24 hours.
  6. Remove from the bath and pat dry.
  7. Sear the heart in a hot skillet for 1-2 minutes on each side until browned.
  8. Slice and serve with additional smoked salt as desired.

Notes

  • Best served with a side of roasted vegetables.
  • Can be marinated for additional flavor before sous vide cooking.
