Ingredients

  • 2 large eggs, separated
  • 1/4 teaspoon cream of tartar
  • 1/4 teaspoon salt
  • 3 tablespoons cream cheese, softened
  • 1 tablespoon fresh dill, chopped (or 1 teaspoon dried dill)
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon black pepper
  • 1/4 cup smoked salmon, sliced
  • 1/4 cup cucumber, thinly sliced
  • Lemon wedges, for serving

Instructions

  1. Preheat your oven to 300°F (150°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, beat the egg whites with cream of tartar until stiff peaks form.
  3. In another bowl, mix the egg yolks, cream cheese, salt, dill, garlic powder, onion powder, and black pepper until smooth.
  4. Gently fold the egg whites into the yolk mixture until just combined, being careful not to deflate the egg whites.
  5. Spoon the mixture onto the prepared baking sheet to form 4 equal rounds.
  6. Bake for 25-30 minutes or until the cloud breads are golden and firm to the touch.
  7. Allow the cloud breads to cool on a wire rack for about 10 minutes.
  8. Once cooled, layer smoked salmon and cucumber slices between two cloud breads to create a sandwich.
  9. Serve with lemon wedges on the side for a fresh squeeze of flavor.

Notes

  • For a spicy kick, add a few slices of jalapeño or a spread of cream cheese mixed with sriracha.
  • You can substitute the smoked salmon with turkey or chicken for a different protein option.
