  • 8 ounces smoked salmon
  • 8 ounces cream cheese, softened
  • 1 tablespoon fresh dill, chopped (or 1 teaspoon dried dill)
  • 1 tablespoon capers, rinsed and drained
  • 1 tablespoon lemon juice
  • 8 slices of whole grain or rye bread
  • 1 small cucumber, thinly sliced
  • Fresh arugula or spinach leaves (optional)
  • Salt and pepper to taste

Instructions

  1. In a medium bowl, combine the softened cream cheese, dill, capers, and lemon juice. Mix until well blended and smooth.
  2. Season the cream cheese mixture with salt and pepper to taste.
  3. Lay out the slices of bread on a clean surface. Spread an even layer of the cream cheese mixture on four of the slices.
  4. Top the cream cheese with a layer of smoked salmon, followed by cucumber slices and arugula or spinach if using.
  5. Place the remaining slices of bread on top to form sandwiches. Press down gently to secure.
  6. Cut each sandwich into halves or quarters for easier serving.
  7. Serve immediately or cover with plastic wrap and refrigerate for up to 1 hour before serving.

Notes

  • For a spicy kick, add a few slices of pickled jalapeños or a smear of horseradish sauce to the cream cheese mixture.
