- 8 ounces smoked salmon
- 8 ounces cream cheese, softened
- 1 tablespoon fresh dill, chopped (or 1 teaspoon dried dill)
- 1 tablespoon capers, rinsed and drained
- 1 tablespoon lemon juice
- 8 slices of whole grain or rye bread
- 1 small cucumber, thinly sliced
- Fresh arugula or spinach leaves (optional)
- Salt and pepper to taste
Instructions
- In a medium bowl, combine the softened cream cheese, dill, capers, and lemon juice. Mix until well blended and smooth.
- Season the cream cheese mixture with salt and pepper to taste.
- Lay out the slices of bread on a clean surface. Spread an even layer of the cream cheese mixture on four of the slices.
- Top the cream cheese with a layer of smoked salmon, followed by cucumber slices and arugula or spinach if using.
- Place the remaining slices of bread on top to form sandwiches. Press down gently to secure.
- Cut each sandwich into halves or quarters for easier serving.
- Serve immediately or cover with plastic wrap and refrigerate for up to 1 hour before serving.
Notes
- For a spicy kick, add a few slices of pickled jalapeños or a smear of horseradish sauce to the cream cheese mixture.
- Substitute the smoked salmon with sliced turkey or chicken for a different flavor profile.
