A delicious and easy recipe for Slow-Cooker Lamb Shanks with Mint Gremolata, perfect for a comforting meal.

- 2 lamb shanks (about 2 pounds total)
- 1 tablespoon olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 carrots, diced
- 2 celery stalks, diced
- 1 cup beef broth
- 1 cup red wine
- 1 tablespoon tomato paste
- 1 teaspoon dried rosemary
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Zest of 1 lemon
- 1/4 cup fresh mint, finely chopped
- 1/4 cup fresh parsley, finely chopped
- 1 tablespoon lemon juice
Instructions
- Season the lamb shanks with salt and pepper. In a large skillet, heat the olive oil over medium-high heat. Sear the lamb shanks on all sides until browned, about 5 minutes per side. Transfer to the slow cooker.
- In the same skillet, add the onion, garlic, carrots, and celery. Sauté for about 5 minutes until softened. Stir in the beef broth, red wine, tomato paste, rosemary, and thyme. Bring to a simmer, then pour the mixture over the lamb shanks in the slow cooker.
- Cover and cook on low for 6 to 8 hours or on high for 4 to 5 hours, until the lamb is tender and falls off the bone.
- While the lamb is cooking, prepare the mint gremolata. In a small bowl, combine the lemon zest, mint, parsley, and lemon juice. Mix well and set aside.
- Once the lamb is done, remove it from the slow cooker and let it rest for a few minutes. Skim any excess fat from the cooking liquid, then serve the lamb shanks with the sauce and a sprinkle of mint gremolata on top.
Notes
- For a richer flavor, try adding a tablespoon of balsamic vinegar to the cooking liquid.
- If you prefer a thicker sauce, remove the lamb shanks once cooked and simmer the sauce on the stovetop until reduced by half.
