Ingredients

  • 2 lamb shanks (about 2 pounds total)
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 cup beef broth
  • 1 cup red wine
  • 1 tablespoon tomato paste
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Zest of 1 lemon
  • 1/4 cup fresh mint, finely chopped
  • 1/4 cup fresh parsley, finely chopped
  • 1 tablespoon lemon juice

Instructions

  1. Season the lamb shanks with salt and pepper. In a large skillet, heat the olive oil over medium-high heat. Sear the lamb shanks on all sides until browned, about 5 minutes per side. Transfer to the slow cooker.
  2. In the same skillet, add the onion, garlic, carrots, and celery. Sauté for about 5 minutes until softened. Stir in the beef broth, red wine, tomato paste, rosemary, and thyme. Bring to a simmer, then pour the mixture over the lamb shanks in the slow cooker.
  3. Cover and cook on low for 6 to 8 hours or on high for 4 to 5 hours, until the lamb is tender and falls off the bone.
  4. While the lamb is cooking, prepare the mint gremolata. In a small bowl, combine the lemon zest, mint, parsley, and lemon juice. Mix well and set aside.
  5. Once the lamb is done, remove it from the slow cooker and let it rest for a few minutes. Skim any excess fat from the cooking liquid, then serve the lamb shanks with the sauce and a sprinkle of mint gremolata on top.

Notes

  • For a richer flavor, try adding a tablespoon of balsamic vinegar to the cooking liquid.
  • If you prefer a thicker sauce, remove the lamb shanks once cooked and simmer the sauce on the stovetop until reduced by half.
