- 2 cups fresh rhubarb, cut into 1-inch pieces
- 1 cup granulated sugar
- 1 cup water
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon (optional)
Instructions
- In a medium saucepan, combine the sugar and water over medium heat. Stir until the sugar is completely dissolved.
- Add the rhubarb pieces to the saucepan and bring the mixture to a gentle simmer.
- Cook the rhubarb for about 5-7 minutes, or until it becomes tender but still holds its shape.
- Remove the saucepan from heat and stir in the vanilla extract and ground cinnamon, if using.
- Allow the rhubarb to cool in the syrup for at least 30 minutes.
- Once cooled, transfer the rhubarb and syrup to a jar or airtight container. Refrigerate for at least 2 hours or overnight for the best flavor.
Notes
- For a tangy twist, add a tablespoon of lemon juice to the syrup before simmering.
- This candied rhubarb can be used as a topping for yogurt, ice cream, or pancakes.
