A simple and elegant recipe for seared scallops with a rich brown butter sauce and caviar.
Ingredients

- 1 pound large sea scallops, patted dry
- 4 tablespoons unsalted butter
- 1 tablespoon olive oil
- Salt and freshly ground black pepper, to taste
- 2 tablespoons caviar (such as sturgeon or salmon)
- 1 tablespoon fresh lemon juice
- Chopped fresh chives, for garnish
Instructions
- Heat a large skillet over medium-high heat. Add the olive oil and 2 tablespoons of butter. Once the butter is melted and bubbling, carefully place the scallops in the skillet, making sure not to overcrowd the pan. Season with salt and pepper.
- Sear the scallops for about 2-3 minutes on one side until a golden crust forms. Flip the scallops and cook for an additional 2-3 minutes until they are opaque and cooked through. Remove the scallops from the skillet and set aside on a plate.
- In the same skillet, add the remaining 2 tablespoons of butter. Allow it to melt and cook until it turns a golden brown color and has a nutty aroma, about 2-3 minutes. Be careful not to burn the butter.
- Remove the skillet from heat and stir in the lemon juice. Return the scallops to the skillet, gently coating them in the brown butter sauce.
- To serve, place the scallops on a plate, drizzle with the brown butter sauce, and top with caviar. Garnish with chopped chives.
Notes
- For a touch of heat, add a pinch of red pepper flakes to the brown butter.
- Serve the scallops over a bed of creamy risotto or alongside sautéed asparagus for a complete meal.
