  • 1 tablespoon olive oil
  • 1 cup fresh spinach, chopped
  • 1 clove garlic, minced
  • 1 teaspoon lemon juice
  • Salt and pepper, to taste
  • 1 (10-ounce) package frozen puff pastry, thawed
  • 1 egg, beaten (for egg wash)
  • 1 tablespoon fresh dill, chopped (optional)

Instructions

  1. Preheat your oven to 400°F.
  2. In a skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
  3. Add the chopped spinach and cook until wilted, about 2-3 minutes. Remove from heat and stir in the lemon juice, salt, pepper, and dill if using. Allow the mixture to cool slightly.
  4. On a lightly floured surface, roll out the puff pastry to about 1/8 inch thick. Cut the pastry into two rectangles large enough to wrap around the salmon fillets.
  5. Place a salmon fillet in the center of each pastry rectangle. Top each fillet with half of the spinach mixture.
  6. Fold the pastry over the salmon, sealing the edges by pressing them together with your fingers or a fork.
  7. Place the wrapped salmon on a baking sheet lined with parchment paper. Brush the tops with the beaten egg for a golden finish.
  8. Bake in the preheated oven for 20-25 minutes, or until the pastry is golden brown and flaky. Let cool for a few minutes before serving.
