- 2 (6-ounce) salmon fillets, skin removed
- 1 tablespoon olive oil
- 1 cup fresh spinach, chopped
- 1 clove garlic, minced
- 1 teaspoon lemon juice
- Salt and pepper, to taste
- 1 (10-ounce) package frozen puff pastry, thawed
- 1 egg, beaten (for egg wash)
- 1 tablespoon fresh dill, chopped (optional)
Instructions
- Preheat your oven to 400°F.
- In a skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
- Add the chopped spinach and cook until wilted, about 2-3 minutes. Remove from heat and stir in the lemon juice, salt, pepper, and dill if using. Allow the mixture to cool slightly.
- On a lightly floured surface, roll out the puff pastry to about 1/8 inch thick. Cut the pastry into two rectangles large enough to wrap around the salmon fillets.
- Place a salmon fillet in the center of each pastry rectangle. Top each fillet with half of the spinach mixture.
- Fold the pastry over the salmon, sealing the edges by pressing them together with your fingers or a fork.
- Place the wrapped salmon on a baking sheet lined with parchment paper. Brush the tops with the beaten egg for a golden finish.
- Bake in the preheated oven for 20-25 minutes, or until the pastry is golden brown and flaky. Let cool for a few minutes before serving.
