- 1 cup milk
- 1 large egg
- 1/4 cup unsalted butter, melted

- 1 cup ricotta cheese
- 1/4 cup fresh basil leaves, chopped
- 1 tablespoon honey
- 1 teaspoon lemon zest
- 1/4 teaspoon garlic powder
Instructions
- Preheat your waffle iron according to the manufacturer’s instructions.
- In a large mixing bowl, whisk together the flour, baking powder, and salt.
- In another bowl, combine the milk, egg, and melted butter.
- Pour the wet ingredients into the dry ingredients and mix until just combined.
- Fold in the grated Parmesan cheese and black pepper.
- Lightly grease the waffle iron with cooking spray or a small amount of oil.
- Pour enough batter into the waffle iron to cover the surface, close the lid, and cook until golden brown and crispy, about 5 minutes.
- Repeat until all the batter is used, making about 4-6 waffles.
- While the waffles are cooking, prepare the basil ricotta mousse by combining the ricotta cheese, chopped basil, honey, lemon zest, and garlic powder in a medium bowl. Mix until smooth and creamy.
- To assemble the sandwiches, spread a generous amount of the basil ricotta mousse on one waffle and top with another waffle to create a sandwich.
- Serve immediately.

- For added flavor, consider adding sliced tomatoes or roasted red peppers inside the sandwich.
