Ingredients

  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1 large egg
  • 1/4 cup unsalted butter, melted
  • 1 cup grated Parmesan cheese
  • 1/4 teaspoon black pepper
  • 1 cup ricotta cheese
  • 1/4 cup fresh basil leaves, chopped
  • 1 tablespoon honey
  • 1 teaspoon lemon zest
  • 1/4 teaspoon garlic powder

Instructions

  1. Preheat your waffle iron according to the manufacturer’s instructions.
  2. In a large mixing bowl, whisk together the flour, baking powder, and salt.
  3. In another bowl, combine the milk, egg, and melted butter.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined.
  5. Fold in the grated Parmesan cheese and black pepper.
  6. Lightly grease the waffle iron with cooking spray or a small amount of oil.
  7. Pour enough batter into the waffle iron to cover the surface, close the lid, and cook until golden brown and crispy, about 5 minutes.
  8. Repeat until all the batter is used, making about 4-6 waffles.
  9. While the waffles are cooking, prepare the basil ricotta mousse by combining the ricotta cheese, chopped basil, honey, lemon zest, and garlic powder in a medium bowl. Mix until smooth and creamy.
  10. To assemble the sandwiches, spread a generous amount of the basil ricotta mousse on one waffle and top with another waffle to create a sandwich.
  11. Serve immediately.
