Ingredients

- 1 cup rolled oats
- 2 cups vegetable broth
- 1 cup chopped spinach
- 1/2 cup cherry tomatoes, halved
- 1 avocado, diced
- 1/4 cup shredded cheese
- 2 eggs, poached or fried
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- In a saucepan, bring the vegetable broth to a boil.
- Add the rolled oats and reduce heat to low. Cook for about 5 minutes, stirring occasionally.
- Stir in the chopped spinach and cook until wilted.
- Divide the oatmeal into bowls and top with cherry tomatoes, avocado, and cheese.
- Cook the eggs to your liking and place on top of the oatmeal.
- Drizzle with olive oil and season with salt and pepper before serving.
