- 2 large crumpets
- 4 large eggs
- 1/4 cup milk
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 teaspoon garlic powder
- 1/2 teaspoon dried parsley
- 1/2 cup shredded cheese (cheddar or your choice)
- 2 tablespoons butter
- Optional toppings: sliced avocado, diced tomatoes, or hot sauce
Instructions
- In a mixing bowl, whisk together the eggs, milk, salt, black pepper, garlic powder, and dried parsley until well combined.
- Heat a non-stick skillet over medium heat and add 1 tablespoon of butter, allowing it to melt and coat the bottom of the pan.
- Place the crumpets in the skillet, cut side up, and pour half of the egg mixture evenly over the crumpets.
- Cook for about 3-4 minutes, or until the edges of the egg begin to set.
- Sprinkle half of the shredded cheese over the egg mixture, then carefully flip the crumpets to cook the other side for another 2-3 minutes, until the eggs are fully cooked and the cheese is melted.
- Remove the crumpets from the skillet and repeat the process with the remaining butter, crumpets, and egg mixture.
- Serve warm, topped with your choice of avocado, diced tomatoes, or a drizzle of hot sauce.
Notes
- For a vegetarian option, add sautéed spinach or mushrooms to the egg mixture before cooking.
- For a spicy kick, mix in some diced jalapeños or a pinch of cayenne pepper into the egg mixture.
