Ingredients

- 2 cans sardines, drained
- 2 egg yolks
- 1/2 cup breadcrumbs
- 1 small onion, finely chopped
- 2 tablespoons fresh parsley, chopped
- 1 teaspoon Dijon mustard
- Salt and pepper to taste
- Oil for frying
Instructions
- In a mixing bowl, combine sardines, egg yolks, breadcrumbs, onion, parsley, and Dijon mustard.
- Season with salt and pepper, mix until well combined.
- Shape the mixture into patties.
- Heat oil in a skillet over medium heat.
- Fry the patties for about 3-4 minutes on each side or until golden brown.
- Transfer to a paper towel to drain excess oil.
- Serve hot with a side of your choice.
