- 1 pound canned salmon, drained and flaked
- 1 cup breadcrumbs
- 1/4 cup finely chopped green onions
- 1/4 cup chopped fresh parsley
- 1 large egg
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon lemon juice
- 2 tablespoons olive oil (for frying)
- 1 ripe avocado
- 1/2 cup Greek yogurt
- 1 tablespoon lime juice
- 1 clove garlic, minced
- Salt and pepper to taste
Instructions
- In a large bowl, combine the flaked salmon, breadcrumbs, green onions, parsley, egg, garlic powder, onion powder, salt, pepper, and lemon juice. Mix until well combined.
- Shape the mixture into small balls, about 1 inch in diameter. You should get around 20 balls.
- Heat olive oil in a large skillet over medium heat. Add the salmon balls in batches, making sure not to overcrowd the pan. Cook for about 4-5 minutes on each side, or until golden brown and cooked through. Remove and drain on paper towels.
- While the salmon balls are cooking, prepare the creamy avocado sauce. In a blender or food processor, combine the avocado, Greek yogurt, lime juice, minced garlic, salt, and pepper. Blend until smooth and creamy.
- Serve the salmon balls warm with the creamy avocado sauce on the side for dipping.
Notes
- For a spicier kick, add a pinch of cayenne pepper or some chopped jalapeños to the salmon mixture.
- Substitute the Greek yogurt with sour cream or a dairy-free yogurt for a different flavor profile.
