Ingredients

  • 1 pound canned salmon, drained and flaked
  • 1 cup breadcrumbs
  • 1/4 cup finely chopped green onions
  • 1/4 cup chopped fresh parsley
  • 1 large egg
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon lemon juice
  • 2 tablespoons olive oil (for frying)
  • 1 ripe avocado
  • 1/2 cup Greek yogurt
  • 1 tablespoon lime juice
  • 1 clove garlic, minced
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the flaked salmon, breadcrumbs, green onions, parsley, egg, garlic powder, onion powder, salt, pepper, and lemon juice. Mix until well combined.
  2. Shape the mixture into small balls, about 1 inch in diameter. You should get around 20 balls.
  3. Heat olive oil in a large skillet over medium heat. Add the salmon balls in batches, making sure not to overcrowd the pan. Cook for about 4-5 minutes on each side, or until golden brown and cooked through. Remove and drain on paper towels.
  4. While the salmon balls are cooking, prepare the creamy avocado sauce. In a blender or food processor, combine the avocado, Greek yogurt, lime juice, minced garlic, salt, and pepper. Blend until smooth and creamy.
  5. Serve the salmon balls warm with the creamy avocado sauce on the side for dipping.

  • For a spicier kick, add a pinch of cayenne pepper or some chopped jalapeños to the salmon mixture.
