- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 1/2 cup honey
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup sour cream
- For the frosting:
- 2 cups heavy cream
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F. Grease and flour three 8-inch round cake pans.
- In a medium bowl, whisk together the flour, baking soda, baking powder, and salt. Set aside.
- In a large mixing bowl, cream the softened butter and granulated sugar together until light and fluffy. Add the honey, eggs, and vanilla extract, mixing until well combined.
- Gradually add the dry ingredients to the wet mixture, alternating with the sour cream. Begin and end with the flour mixture, mixing just until combined.
- Divide the batter evenly among the prepared cake pans. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Allow the cakes to cool in the pans for 10 minutes before transferring them to wire racks to cool completely.
- For the frosting, whip the heavy cream in a large bowl until soft peaks form. Gradually add the powdered sugar and vanilla extract, continuing to whip until stiff peaks form.
- Once the cakes are completely cool, place one layer on a serving platter. Spread a layer of frosting on top, then add the second layer and repeat. Top with the third layer and frost the top and sides of the cake.
- Chill the cake in the refrigerator for at least 2 hours before serving to allow the flavors to meld.
Notes
- For a richer flavor, consider adding a layer of fruit preserves between the cake layers.
- You can also substitute the sour cream with Greek yogurt for a tangier taste.
