  • 1 teaspoon baking soda
  • 1 teaspoon baking powder

  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1/2 cup honey
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup sour cream
  • For the frosting:
  • 2 cups heavy cream
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F. Grease and flour three 8-inch round cake pans.
  2. In a medium bowl, whisk together the flour, baking soda, baking powder, and salt. Set aside.
  3. In a large mixing bowl, cream the softened butter and granulated sugar together until light and fluffy. Add the honey, eggs, and vanilla extract, mixing until well combined.
  4. Gradually add the dry ingredients to the wet mixture, alternating with the sour cream. Begin and end with the flour mixture, mixing just until combined.
  5. Divide the batter evenly among the prepared cake pans. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Allow the cakes to cool in the pans for 10 minutes before transferring them to wire racks to cool completely.
  6. For the frosting, whip the heavy cream in a large bowl until soft peaks form. Gradually add the powdered sugar and vanilla extract, continuing to whip until stiff peaks form.
  7. Once the cakes are completely cool, place one layer on a serving platter. Spread a layer of frosting on top, then add the second layer and repeat. Top with the third layer and frost the top and sides of the cake.
  8. Chill the cake in the refrigerator for at least 2 hours before serving to allow the flavors to meld.

Notes

  • For a richer flavor, consider adding a layer of fruit preserves between the cake layers.
