- 1 whole pheasant
- 8 slices bacon
- 2 garlic cloves, minced
- 1 teaspoon fresh thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons olive oil
Instructions
- Preheat the oven to 375°F (190°C).
- Season the pheasant inside and out with salt, pepper, minced garlic, and thyme.
- Wrap the pheasant with bacon slices, securing them with toothpicks if necessary.
- Heat olive oil in a skillet over medium-high heat and sear the pheasant on all sides until browned.
- Transfer the pheasant to a baking dish and roast in the oven for about 1 hour, or until the internal temperature reaches 165°F (75°C).
- Let the pheasant rest for 10 minutes before carving and serving.
