- 2 cups fresh raspberries
- 1 cup heavy cream
- 1 cup whole milk
- 3 large eggs
- 3/4 cup granulated sugar
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1 tablespoon cornstarch
- 1 tablespoon powdered sugar (for dusting)
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9-inch baking dish with butter or non-stick spray.
- In a medium saucepan, combine the heavy cream and whole milk. Heat over medium heat until just simmering, then remove from heat.
- In a mixing bowl, whisk together the eggs, granulated sugar, vanilla extract, and salt until well combined.
- Gradually pour the warm cream mixture into the egg mixture, whisking continuously to prevent the eggs from scrambling.
- In a small bowl, mix the cornstarch with a tablespoon of the warm custard mixture until smooth. Then stir this back into the main custard mixture.
- Place the raspberries evenly in the prepared baking dish. Pour the custard mixture over the raspberries, ensuring they are well covered.
- Bake in the preheated oven for 30-35 minutes, or until the custard is set and lightly golden on top.
- Remove from the oven and let cool for at least 15 minutes. Dust with powdered sugar before serving.

- For a richer flavor, try adding a teaspoon of almond extract to the custard mixture.
