  • 1 tablespoon cornstarch
  • 1 tablespoon powdered sugar (for dusting)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9-inch baking dish with butter or non-stick spray.
  2. In a medium saucepan, combine the heavy cream and whole milk. Heat over medium heat until just simmering, then remove from heat.
  3. In a mixing bowl, whisk together the eggs, granulated sugar, vanilla extract, and salt until well combined.
  4. Gradually pour the warm cream mixture into the egg mixture, whisking continuously to prevent the eggs from scrambling.
  5. In a small bowl, mix the cornstarch with a tablespoon of the warm custard mixture until smooth. Then stir this back into the main custard mixture.
  6. Place the raspberries evenly in the prepared baking dish. Pour the custard mixture over the raspberries, ensuring they are well covered.
  7. Bake in the preheated oven for 30-35 minutes, or until the custard is set and lightly golden on top.
  8. Remove from the oven and let cool for at least 15 minutes. Dust with powdered sugar before serving.
