Description
A rich and flavorful spread made with rabbit and duck fat.
Ingredients

- 2 cups cooked rabbit, shredded
- 1 cup duck fat
- 2 cloves garlic, minced
- 1 onion, finely chopped
- 1 teaspoon thyme
- 1 teaspoon bay leaves
- 1/2 teaspoon black pepper
- 1/4 teaspoon salt
Instructions
- In a skillet, melt the duck fat over medium heat.
- Add onions and garlic, sauté until translucent.
- Add the rabbit, thyme, bay leaves, pepper, and salt. Cook for about 10 minutes.
- Transfer the mixture to a food processor and pulse until coarsely blended.
- Pack the rillettes into a jar and cover with additional duck fat.
- Refrigerate for at least 3 days before serving.
Notes
- Best served with crusty bread.
- Allowing the rillettes to rest enhances the flavor.
