Ingredients

  • 2 cups cooked rabbit, shredded
  • 1 cup duck fat
  • 2 cloves garlic, minced
  • 1 onion, finely chopped
  • 1 teaspoon thyme
  • 1 teaspoon bay leaves
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon salt

Instructions

  1. In a skillet, melt the duck fat over medium heat.
  2. Add onions and garlic, sauté until translucent.
  3. Add the rabbit, thyme, bay leaves, pepper, and salt. Cook for about 10 minutes.
  4. Transfer the mixture to a food processor and pulse until coarsely blended.
  5. Pack the rillettes into a jar and cover with additional duck fat.
  6. Refrigerate for at least 3 days before serving.
