- 1 tablespoon unsweetened almond milk (or water)
- 1 tablespoon melted butter or coconut oil
- 1/4 teaspoon vanilla extract
- Pinch of salt
Instructions
- In a microwave-safe mug, whisk together the egg, almond flour, coconut flour, cocoa powder (if using), erythritol, baking powder, almond milk, melted butter, vanilla extract, and salt until smooth and well combined.
- Microwave the mug on high for 1 to 1.5 minutes, checking at the 1-minute mark. The muffin should rise and be set in the middle.
- Allow the muffin to cool for a minute before enjoying it directly from the mug or transferring it to a plate.
Notes
- For a blueberry muffin, fold in 2 tablespoons of fresh or frozen blueberries before microwaving.
