Instructions

  1. Begin by mixing the warm water, sugar, and instant yeast in a large bowl. Allow it to rest for about 5 minutes until it becomes frothy.
  2. Incorporate the sourdough starter and the mashed purple sweet potato into the yeast mixture, stirring until everything is well blended.
  3. Slowly add the all-purpose flour and salt, mixing until a rough dough begins to form.
  4. Transfer the dough to a floured surface and knead for approximately 8-10 minutes until it achieves a smooth and elastic texture.
  5. Place the kneaded dough in a greased bowl, cover it with a damp cloth, and let it rise in a warm area for 1-2 hours, or until it has doubled in size.
  6. After the dough has risen, gently deflate it and cut it into 8 equal portions. Roll each piece into a ball, ensuring a smooth surface.
