Instructions
- Begin by mixing the warm water, sugar, and instant yeast in a large bowl. Allow it to rest for about 5 minutes until it becomes frothy.
- Incorporate the sourdough starter and the mashed purple sweet potato into the yeast mixture, stirring until everything is well blended.
- Slowly add the all-purpose flour and salt, mixing until a rough dough begins to form.
- Transfer the dough to a floured surface and knead for approximately 8-10 minutes until it achieves a smooth and elastic texture.
- Place the kneaded dough in a greased bowl, cover it with a damp cloth, and let it rise in a warm area for 1-2 hours, or until it has doubled in size.
- After the dough has risen, gently deflate it and cut it into 8 equal portions. Roll each piece into a ball, ensuring a smooth surface.
- Arrange the dough balls on a baking sheet lined with parchment paper, cover them with a cloth, and allow them to rise for another 30-45 minutes.
- Preheat your oven to 375°F.
- Bake the rolls for 20-25 minutes, or until they turn a lovely golden brown and sound hollow when tapped on the bottom.
