- 2 cups cooked chicken, shredded
- 1 cup frozen mixed vegetables (peas, carrots, corn, green beans)
- 1/2 cup onion, diced
- 1/2 cup celery, diced
- 1/4 cup butter
- 1/4 cup all-purpose flour
- 2 cups chicken broth
- 1 cup milk
- 1 teaspoon garlic powder
- 1 teaspoon dried thyme
- Salt and pepper to taste
- 1 package (17.3 ounces) frozen puff pastry (2 sheets), thawed
- 1 egg, beaten (for egg wash)
Instructions
- Preheat the oven to 400°F (200°C).
- In a large skillet, melt the butter over medium heat. Add the diced onion and celery, cooking until softened, about 5 minutes.
- Stir in the flour and cook for 1 minute, stirring constantly. Gradually whisk in the chicken broth and milk, ensuring there are no lumps.
- Add the garlic powder, dried thyme, salt, and pepper. Bring the mixture to a simmer and cook until thickened, about 5-7 minutes.
- Stir in the shredded chicken and frozen mixed vegetables. Remove from heat and let cool slightly.
- Roll out one sheet of puff pastry on a lightly floured surface to fit your baking dish. Place it in the dish, allowing the edges to hang over.
- Pour the chicken mixture into the pastry-lined dish.
- Roll out the second sheet of puff pastry and place it over the filling. Trim any excess pastry and crimp the edges to seal. Cut a few slits in the top for steam to escape.
- Brush the top with the beaten egg for a golden finish.
- Bake in the preheated oven for 25-30 minutes, or until the pastry is golden brown and puffed.
- Let cool for 10 minutes before serving.
Notes
- For a creamier filling, add 1/2 cup of heavy cream to the chicken mixture before pouring it into the pastry.
- You can substitute the chicken with turkey or a mix of your favorite vegetables for a vegetarian version.
