Ingredients

  • 1 cup frozen mixed vegetables (peas, carrots, corn, green beans)
  • 1/2 cup onion, diced
  • 1/2 cup celery, diced
  • 1/4 cup butter
  • 1/4 cup all-purpose flour
  • 2 cups chicken broth
  • 1 cup milk
  • 1 teaspoon garlic powder
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 1 package (17.3 ounces) frozen puff pastry (2 sheets), thawed
  • 1 egg, beaten (for egg wash)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large skillet, melt the butter over medium heat. Add the diced onion and celery, cooking until softened, about 5 minutes.
  3. Stir in the flour and cook for 1 minute, stirring constantly. Gradually whisk in the chicken broth and milk, ensuring there are no lumps.
  4. Add the garlic powder, dried thyme, salt, and pepper. Bring the mixture to a simmer and cook until thickened, about 5-7 minutes.
  5. Stir in the shredded chicken and frozen mixed vegetables. Remove from heat and let cool slightly.
  6. Roll out one sheet of puff pastry on a lightly floured surface to fit your baking dish. Place it in the dish, allowing the edges to hang over.
  7. Pour the chicken mixture into the pastry-lined dish.
  8. Roll out the second sheet of puff pastry and place it over the filling. Trim any excess pastry and crimp the edges to seal. Cut a few slits in the top for steam to escape.
  9. Brush the top with the beaten egg for a golden finish.
  10. Bake in the preheated oven for 25-30 minutes, or until the pastry is golden brown and puffed.
  11. Let cool for 10 minutes before serving.

  • For a creamier filling, add 1/2 cup of heavy cream to the chicken mixture before pouring it into the pastry.
