Ingredients

  • 2 large russet potatoes (about 1.5 pounds), peeled and cut into sticks
  • 1 cup shredded mozzarella cheese
  • 1/2 cup all-purpose flour
  • 2 large eggs
  • 1 cup breadcrumbs (preferably panko for extra crunch)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • Vegetable oil for frying

Instructions

  1. Begin by boiling the potato sticks in a large pot of salted water for about 5-7 minutes, or until slightly tender but not fully cooked. Drain and let them cool completely.
  2. In a bowl, mix the flour, garlic powder, onion powder, paprika, salt, and pepper. Set aside.
  3. In another bowl, beat the eggs until well combined.
  4. Place the breadcrumbs in a third bowl.
  5. Take each potato stick, coat it in the flour mixture, dip it in the beaten eggs, and then roll it in the breadcrumbs until fully coated.
  6. Heat about 1 inch of vegetable oil in a deep skillet over medium heat.
  7. Once the oil is hot, carefully add the coated potato sticks in batches, frying them for about 3-4 minutes on each side or until golden brown and crispy.
  8. Remove the sticks from the oil and place them on a paper towel-lined plate to drain excess oil.
  9. While the sticks are still hot, insert a small piece of mozzarella cheese into the center of each stick, allowing it to melt slightly.
  10. Serve immediately with your favorite dipping sauce, such as marinara or ranch.
