- 2 large russet potatoes (about 1.5 pounds), peeled and cut into sticks
- 1 cup shredded mozzarella cheese
- 1/2 cup all-purpose flour
- 2 large eggs
- 1 cup breadcrumbs (preferably panko for extra crunch)
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon paprika
- Salt and pepper to taste
- Vegetable oil for frying
Instructions
- Begin by boiling the potato sticks in a large pot of salted water for about 5-7 minutes, or until slightly tender but not fully cooked. Drain and let them cool completely.
- In a bowl, mix the flour, garlic powder, onion powder, paprika, salt, and pepper. Set aside.
- In another bowl, beat the eggs until well combined.
- Place the breadcrumbs in a third bowl.
- Take each potato stick, coat it in the flour mixture, dip it in the beaten eggs, and then roll it in the breadcrumbs until fully coated.
- Heat about 1 inch of vegetable oil in a deep skillet over medium heat.
- Once the oil is hot, carefully add the coated potato sticks in batches, frying them for about 3-4 minutes on each side or until golden brown and crispy.
- Remove the sticks from the oil and place them on a paper towel-lined plate to drain excess oil.
- While the sticks are still hot, insert a small piece of mozzarella cheese into the center of each stick, allowing it to melt slightly.
- Serve immediately with your favorite dipping sauce, such as marinara or ranch.

- For a spicier kick, add cayenne pepper to the flour mixture.
