  • 1/2 cup coconut milk
  • 1/4 cup unsalted butter, melted

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 12-cup muffin tin or line it with paper liners.
  2. In a large mixing bowl, combine the shredded coconut, sugar, eggs, flour, baking powder, and salt. Mix well until all ingredients are combined.
  3. Add the vanilla extract, coconut milk, and melted butter to the mixture. Stir until smooth and well incorporated.
  4. Pour the batter evenly into the prepared muffin tin, filling each cup about 3/4 full.
  5. Bake in the preheated oven for 20-25 minutes, or until the tops are golden brown and a toothpick inserted into the center comes out clean.
  6. Allow the cakes to cool in the tin for about 10 minutes before transferring them to a wire rack to cool completely.
