- 2 cups shredded unsweetened coconut
- 1 cup granulated sugar
- 4 large eggs
- 1/2 cup all-purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
- 1/2 cup coconut milk
- 1/4 cup unsalted butter, melted
Instructions
- Preheat the oven to 350°F (175°C). Grease a 12-cup muffin tin or line it with paper liners.
- In a large mixing bowl, combine the shredded coconut, sugar, eggs, flour, baking powder, and salt. Mix well until all ingredients are combined.
- Add the vanilla extract, coconut milk, and melted butter to the mixture. Stir until smooth and well incorporated.
- Pour the batter evenly into the prepared muffin tin, filling each cup about 3/4 full.
- Bake in the preheated oven for 20-25 minutes, or until the tops are golden brown and a toothpick inserted into the center comes out clean.
- Allow the cakes to cool in the tin for about 10 minutes before transferring them to a wire rack to cool completely.
Notes
- For a tropical twist, consider adding 1/2 cup of crushed pineapple to the batter.
- For a chocolate variation, fold in 1/2 cup of chocolate chips before baking.
