- 2 tablespoons olive oil
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 carrot, diced
- 1 celery stalk, diced
- 1 pound smoked sausage, sliced (such as kielbasa or chorizo)
- 1 can (15 ounces) kidney beans, drained and rinsed
- 1 can (15 ounces) white beans, drained and rinsed
- 1 can (14.5 ounces) diced tomatoes, undrained
- 4 cups chicken broth
- 2 cups kale or spinach, chopped
- 1 teaspoon dried oregano
- 1 teaspoon paprika
- Salt and pepper to taste
- 2 cups diced potatoes (about 2 medium potatoes)
- 1 bay leaf
Instructions
- In a large pot, heat the olive oil over medium heat.
- Add the diced onion, garlic, carrot, and celery. Sauté for about 5 minutes, or until the vegetables are softened.
- Add the sliced sausage to the pot and cook for another 5 minutes until browned.
- Stir in the kidney beans, white beans, diced tomatoes, chicken broth, chopped kale, oregano, paprika, salt, pepper, diced potatoes, and bay leaf.
- Bring the soup to a boil, then reduce the heat to low.
- Cover and let it simmer for about 30-40 minutes, or until the potatoes are tender.
- Remove the bay leaf before serving.
- Serve hot, garnished with fresh parsley if desired.
