  • 1 can (15 ounces) kidney beans, drained and rinsed
  • 1 can (15 ounces) white beans, drained and rinsed
  • 1 can (14.5 ounces) diced tomatoes, undrained
  • 4 cups chicken broth
  • 2 cups kale or spinach, chopped
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 2 cups diced potatoes (about 2 medium potatoes)
  • 1 bay leaf

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the diced onion, garlic, carrot, and celery. Sauté for about 5 minutes, or until the vegetables are softened.
  3. Add the sliced sausage to the pot and cook for another 5 minutes until browned.
  4. Stir in the kidney beans, white beans, diced tomatoes, chicken broth, chopped kale, oregano, paprika, salt, pepper, diced potatoes, and bay leaf.
  5. Bring the soup to a boil, then reduce the heat to low.
  6. Cover and let it simmer for about 30-40 minutes, or until the potatoes are tender.
  7. Remove the bay leaf before serving.
  8. Serve hot, garnished with fresh parsley if desired.
