- 4 pounds pork trotters
- 1 large onion, quartered
- 2 carrots, chopped
- 2 celery stalks, chopped
- 6 cloves garlic, smashed
- 2 bay leaves
- 10 whole black peppercorns
- 2 tablespoons apple cider vinegar
- 8 cups water
Instructions
- In a large pot, combine all ingredients.
- Bring to a boil, then reduce heat to a simmer.
- Simmer for at least 4 hours, skimming off any foam that rises to the surface.
- Strain the broth through a fine mesh sieve, discarding solids.
- Return the broth to the pot and reduce over medium heat until desired consistency is reached.
- Cool and store in the refrigerator or freezer.
