Description

Deliciously tender pork belly burnt ends made without sauce for a flavorful bite.


Ingredients

  • 2 pounds pork belly
  • 2 tablespoons smoked paprika
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 2 teaspoons black pepper
  • 2 teaspoons kosher salt
  • 1 teaspoon cayenne pepper

Instructions

  1. Preheat the smoker to 225°F (107°C).
  2. Cut the pork belly into bite-sized cubes.
  3. In a large bowl, mix the spices together.
  4. Coat the pork belly cubes with the spice mixture.
  5. Place the pork belly on the smoker grates and smoke for 3 hours.
  6. Remove from the smoker, wrap in foil, and return to the smoker for another hour.
  7. Unwrap and continue to smoke for an additional hour until caramelized.

Notes

  • For a sweeter version, you can add brown sugar to the spice mix.
  • Make sure the pork belly has a good amount of fat for rich flavor.
