Ingredients

  • 1 cup mascarpone cheese
  • 3/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup brewed espresso, cooled
  • 1/2 cup pistachio paste
  • 1 package ladyfinger cookies (7 ounces)
  • 1/2 cup chopped pistachios (for garnish)
  • Cocoa powder (for dusting)

Instructions

  1. In a large mixing bowl, whip the heavy cream until soft peaks form. Gradually add the powdered sugar and continue whipping until stiff peaks form.
  2. In another bowl, combine the mascarpone cheese, vanilla extract, and pistachio paste. Gently fold the whipped cream into the mascarpone mixture until fully combined.
  3. Quickly dip each ladyfinger into the cooled espresso, ensuring they are soaked but not soggy.
  4. In a 9×9-inch dish, layer half of the soaked ladyfingers on the bottom. Spread half of the pistachio mascarpone mixture over the ladyfingers.
  5. Repeat with another layer of soaked ladyfingers and the remaining mascarpone mixture.
  6. Cover and refrigerate for at least 4 hours, or overnight for best results.
  7. Before serving, dust the top with cocoa powder and sprinkle with chopped pistachios for garnish.
