- 3 tablespoons unsalted butter
- 1 package (10 ounces) mini marshmallows
- 1 teaspoon vanilla extract
- 6 cups Rice Krispies cereal
- 1 cup shelled pistachios, roughly chopped
- 1/2 cup white chocolate chips
Instructions
- In a large saucepan, melt the butter over low heat. Add the mini marshmallows and stir continuously until completely melted and smooth. Remove from heat and stir in the vanilla extract.
- Add the Rice Krispies cereal to the melted marshmallow mixture. Stir until the cereal is evenly coated.
- Gently fold in the chopped pistachios and white chocolate chips until well distributed.
- Grease a 9×13-inch baking dish with butter or cooking spray. Pour the mixture into the dish and press it down evenly with a spatula or your hands (dampen your hands slightly to prevent sticking).
- Allow the treats to cool at room temperature for about 30 minutes before cutting into squares.
Notes
- For a fun twist, try adding a pinch of sea salt on top before the treats cool for a sweet and salty flavor.
- You can also substitute the white chocolate chips with dark chocolate chips for a richer taste.
