- 1 cup pistachios, shelled and unsalted
- 1 cup granulated sugar
- 1/2 cup heavy cream
- 1/2 cup milk
- 1/4 cup unsalted butter
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1 cup cake flour
- 1/2 teaspoon baking powder
- 3 large eggs
- 1/2 cup powdered sugar
- 1/2 cup chopped dark chocolate (optional for garnish)
Instructions
- Preheat the oven to 350°F. Grease and line an 8-inch round cake pan with parchment paper.
- In a food processor, blend the pistachios until finely ground.
- In a saucepan over medium heat, combine the granulated sugar and 1/4 cup of water. Cook until the sugar dissolves and turns a light amber color.
- Remove from heat and stir in the heavy cream, milk, butter, vanilla extract, and salt until smooth.
- In a mixing bowl, whisk together the cake flour and baking powder.
- In another bowl, beat the eggs and powdered sugar until light and fluffy.
- Gradually fold in the flour mixture and the ground pistachios until just combined.
- Pour the batter into the prepared cake pan and bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
- Let it cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
- Once cooled, slice the cake horizontally into two layers.
- Spread half of the pistachio praline mixture between the layers and top with the remaining mixture.
- If desired, melt the dark chocolate and drizzle it over the top for garnish.
- Chill the entremet in the refrigerator for at least 2 hours before serving to allow the flavors to meld.
Notes
- For a nuttier flavor, consider adding a layer of crushed pistachios on top of the praline.
- You can also substitute almond flour for half of the cake flour for a different texture.
