Ingredients

  • 1 cup pistachios, shelled and unsalted
  • 1 cup granulated sugar
  • 1/2 cup heavy cream
  • 1/2 cup milk
  • 1/4 cup unsalted butter
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1 cup cake flour
  • 1/2 teaspoon baking powder
  • 3 large eggs
  • 1/2 cup powdered sugar
  • 1/2 cup chopped dark chocolate (optional for garnish)

Instructions

  1. Preheat the oven to 350°F. Grease and line an 8-inch round cake pan with parchment paper.
  2. In a food processor, blend the pistachios until finely ground.
  3. In a saucepan over medium heat, combine the granulated sugar and 1/4 cup of water. Cook until the sugar dissolves and turns a light amber color.
  4. Remove from heat and stir in the heavy cream, milk, butter, vanilla extract, and salt until smooth.
  5. In a mixing bowl, whisk together the cake flour and baking powder.
  6. In another bowl, beat the eggs and powdered sugar until light and fluffy.
  7. Gradually fold in the flour mixture and the ground pistachios until just combined.
  8. Pour the batter into the prepared cake pan and bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
  9. Let it cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
  10. Once cooled, slice the cake horizontally into two layers.
  11. Spread half of the pistachio praline mixture between the layers and top with the remaining mixture.
  12. If desired, melt the dark chocolate and drizzle it over the top for garnish.
  13. Chill the entremet in the refrigerator for at least 2 hours before serving to allow the flavors to meld.

Notes

  • For a nuttier flavor, consider adding a layer of crushed pistachios on top of the praline.
  • You can also substitute almond flour for half of the cake flour for a different texture.
