- 1 cup pistachios, shelled and finely ground
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 3/4 cup olive oil
- 1 cup granulated sugar
- 3 large eggs
- 1 teaspoon vanilla extract
- 1/2 teaspoon almond extract
- 1/2 cup milk
Instructions
- Preheat the oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
- In a bowl, whisk together the ground pistachios, flour, baking powder, baking soda, and salt.
- In a separate bowl, beat the olive oil and sugar until well combined.
- Add the eggs one at a time, mixing well after each addition. Stir in the vanilla and almond extracts.
- Gradually add the dry ingredients to the wet ingredients, alternating with the milk, and mix until combined.
- Pour the batter into the prepared pan and smooth the top.
- Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
- Allow to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
Notes
- This cake can be served plain or with a dusting of powdered sugar.
- For added flavor, consider adding a citrus glaze on top.
