  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract
  • 1/2 cup milk

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
  2. In a bowl, whisk together the ground pistachios, flour, baking powder, baking soda, and salt.
  3. In a separate bowl, beat the olive oil and sugar until well combined.
  4. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla and almond extracts.
  5. Gradually add the dry ingredients to the wet ingredients, alternating with the milk, and mix until combined.
  6. Pour the batter into the prepared pan and smooth the top.
  7. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  8. Allow to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
